December is one of my favourite months of the year, and not just for the festivities, but also because all of the wonderful earthy fruit and vegetables are in their prime. Winter is the time to lean into the joys of low cooking; taking solace in your cosy kitchen when it is too cold to go outside. I make the most of the speckles of vibrancy coming from clementines, radicchio, pomegranate, and kale, all peeking through the whites and browns of winter.

LAST MONTH TO ENJOY: chestnuts, cranberries, red cabbage, romanesco cauliflower, quince, spinach, sorrel, truffles
